Sugar & Spice

This will be my last post for a few days -- tomorrow our little Laney will be making her entry into this world -- on her Mommy's birthday. What a sweet gift for both of my OKC girls -- sharing a 'birth' day !
One last recipe before Christmas and with a baby girl due tomorrow -- I think the title is appropriate !
Sugar & Spice Biscotti


  • 3/4 cup granulated sugar

  • 1/2 cup vegetable oil

  • 2 eggs

  • 2 tsp vanilla

  • 1/4 tsp salt

  • 1/2 tsp ground cinnamon

  • 1-1/2 tsp baking powder

  • 2 cups all-purpose flour

  • 1/2 cup chopped walnuts or pecans

Additional ingredients:

  • 1/2 cup granulated sugar

  • 1/4 tsp ground cinnamon


Combine sugar & oil together in a medium bowl. Stir in eggs and vanilla until well-blended. Combine dry ingredients with wet mixture. Stir in walnuts. On a lightly-floured surface, form dough into a 10" x 3" log. Place dough log on parchment-lined (or lightly greased) cookie sheet, flattening slightly. Combine additional sugar and cinnamon, sprinkle over log. Bake at 350 degrees for 25-30 minutes or until center is firm. Cool 10 to 15 minutes. Cut crosswise into 1/2' slices (an electric knife works very well). Place cookies cut side down on baking sheet. Bake at 325 degrees for 10 to 20 minutes until brown around the edges & dry. Turn cookies once during baking for even baking. Cool and store in an air-tight container. Cookies can be drizzled with melted white chocolate or dunk one end and sprinkle with decorator sugar. Note: Recipe may be doubled.

Sugar & Spice Biscotti - Chocolate Nut Biscotti and gingerbread cookies. The last of the cookie baking. Now, all that's left to make is the Christmas Crunch and the Sugared Nuts -- and, we will be ready to fill the gift tins.
