Banana-Nut Muffins

Banana-Nut Muffins
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 eggs, beaten
  • 3 very ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 3 Tbsp buttermilk
  • 1 tsp vanilla
  • 1/2 cup chopped walnuts

Beat together the oil and sugar. Add the eggs and bananas; beat well. Sift together the flour, soda, baking powder and salt; add to the banana mixture with the buttermilk and vanilla. Mix well. Stir in nuts. Bake in greased muffin tins in a 350 degree oven for about 20-30 minutes (depending on size muffin tin used).

Baked a batch last night -- the recipe is from one of my favorite cookbooks ( a gift from Sharon - we've been friends since first grade and when you are as old as we are - that's quite a few years ago).

I made a few changes in the recipe: didn't have buttermilk so I used some Mandarin Orange Yogurt instead -- also didn't have walnuts so I used pecans (from the trees in my Mom's yard in southern Oklahoma). The muffins are very good and a few will be my breakfast for the next couple of days and the rest will go into the freezer.
